Directions:
Combine flour with sugar, baking powder, baking soda and salt in a large bowl. Add kiwi and walnuts; mix well. Add eggs, butter and vanilla. Stir until blended. Put into a greased and floured 9-by-5-by-3 inch loaf pan. Bake at 350 degrees Farenheit until done about 1 hour. Allow pan to cool for five minutes, then put back onto rack to complete cooling. Serve in thin slices. Very good with a softened cream cheese spread.
Health Tips:
Kiwi is rich in vitamin C. Its potassium content by weight is slightly less than that of a banana. It also contains vitamins A and E. The skin is a good source of flavonoid antioxidants.
